Potatoes were the last cooked food I stopped enjoying. It was years, maybe even a decade, before I could go past a chip shop in winter without lusting after some chips. Amazingly, the cravings stopped eventually, and now if I met you in a chip shop I would not even be tempted to sneak one off your plate. These are reminiscent of chips – greasy, covered in salt and vinegar, and, if you eat them straight out of the dehydrator, even warm.

■ 500 g/1 lb (approx 3) courgettes

■ 1 tbsp Balsamic vinegar

■ 2 tbsp olive oil

■ 1 tbsp tamari

■ 2 tbsp Atlantic sea salad
